Dalrymple Single Site Pipers River Pinot Noir Pineau d'Aunis We believe it offers outstandingHand picked with precision, the fruit was divided between two fermenters 30% whole bunches and the rest delicately destemmed. A natural fermentation began after three days, completing within five more. Gentle hand plunges during active fermentation coaxed out fine, silky tannins. Once drained, pressed, and settled, the wine was aged in French oak barriques (35% new) for 10 months, undergoing malolactic fermentation along the way. The bouquet is a
