The grapes are harvested by hand, followed by static settling without the addition of sugar. Indigenous yeasts participate in fermentation, and the wine is then aged in oak barrels for 10 months, with no sulfites added before bottling. The deep clay limestone soil gives this wine a beautiful structure and great elegance.
